Blueberry  Muffins
(My favorite muffin recipe-not too sweet, good texture.  One of our customers added orange peel and nuts for a
variation)

2 ½ cups flour
2 ½ teaspoon baking powder
¼  teaspoon salt
¾ cup sugar
1 cup buttermilk
2 eggs, beaten
½ cup salad oil
1 ½ cups blueberries

1.  Sift together the flour, baking powder, salt and ½ cup sugar.
2.  Add buttermilk, eggs and oil, mixing only until dry ingredients are dampened.  Gently fold in berries.  
3.  Spoon into greased muffin tins, filling 2/3 full. Sprinkle with remaining sugar.
4.  Bake at 400 degrees for 20-25 minutes.  Makes about 16 muffins.
